Ingredients
  

Main Ingredients
  • 600 g Good Quality White Chocolate Use high-quality white chocolate, broken into pieces for easier melting.
  • 3/4 cup Dried Cranberries Adds tartness and provides fiber.
  • 120 g Raw and Unsalted Macadamia Nuts Rich in healthy fats and protein; halved for better mixing.
  • 80 g Unsalted Pistachio Nuts Adds color and crunch.
  • 180 g Marshmallows Provides a chewy texture.
  • 1/2 cup Freeze-Dried Strawberries Can substitute with cherries or raspberries.
Optional Toppings
  • Extra Crushed Pistachios, Freeze-Dried Berries, or Cranberries For decoration and added flavor.

Method
 

Preparation
  1. Line an 18cm x 28cm slice tin (or a 20cm square cake tin) with baking paper.
  2. In a large bowl, combine dried cranberries, halved macadamia nuts, marshmallows, pistachios, and freeze-dried strawberries.
Melting the Chocolate
  1. Melt the white chocolate in a microwave or stovetop until smooth, making sure to cool slightly before mixing.
Combining Ingredients
  1. Pour the melted chocolate over the dry ingredients and mix gently until everything is well-coated.
Filling and Setting
  1. Spoon the mixture into the prepared tin, spread evenly, and press lightly.
  2. Optional: Decorate the top with extra crushed pistachios and freeze-dried berries.
  3. Chill in the fridge for at least 1.5 hours until set.
Serving
  1. Once set, slice into pieces and serve.
  2. Store leftovers in an airtight container in the fridge for 2-3 weeks.

Notes

For a healthier option, use sugar-free white chocolate. This recipe can easily be prepared in advance for meal prep, and feel free to switch out the nuts or fruits as desired.
