  • 1 cup Salsa Verde Can be homemade or store-bought.
  • 4 pieces Eggs Optional, can be fried to preference.
  • 2 tablespoons Oil For frying, use healthier options like avocado or olive oil.
  • 1 teaspoon Salt Use sparingly for heart health.
Optional Garnishes
  • 1/2 cup Cheese Use low-fat cheese for a healthier option.
  • 1/4 cup Onion Chopped, for garnish.
  • 1/4 cup Cilantro Chopped, for garnish.

Method
 

Preparation
  1. Cut the corn tortillas into triangles.
Frying Tortillas
  1. In a non-stick skillet, heat a small amount of oil over medium heat. Add the tortilla triangles and fry until golden brown and crispy, about 2-3 minutes.
  2. Remove the fried tortillas from the skillet and drain them on paper towels.
Cooking Salsa Verde
  1. In the same skillet, add the salsa verde and bring to a simmer over medium heat for about 2-3 minutes.
Combining Ingredients
  1. Add the fried tortillas to the simmering salsa verde and gently stir to coat them evenly.
Optional Eggs
  1. If using, fry the eggs to your liking.
Serving
  1. Serve the chilaquiles hot, topped with fried eggs (if using), cheese, and garnished with fresh onion and cilantro.

Notes

Meal prep by preparing salsa verde and frying tortillas ahead of time. Store leftovers in an airtight container for up to 2 days. Adding beans or avocado enhances nutrition.
