  • 1/4 cup red onion, chopped
  • 2 limes juice of
  • 1 tsp olive oil
  • 1/4 tsp kosher salt
  • to taste Black pepper
Main Ingredients
  • 1 lb jumbo cooked, peeled shrimp, chopped
  • 1 medium tomato, diced
  • 1 medium Hass avocado, diced (about 5 oz)
  • 1 jalapeno, seeds removed, diced fine
  • 1 tbsp chopped cilantro

Method
 

Preparation
  1. In a small bowl, combine the chopped red onion, lime juice, olive oil, salt, and black pepper. Let this marinate for at least 5 minutes to mellow the flavor of the onion.
  2. In a large bowl, mix together the chopped shrimp, diced avocado, diced tomato, and finely chopped jalapeno.
  3. Pour the marinated onion mixture over the shrimp and avocado mixture. Add the chopped cilantro and gently toss everything together.
  4. Adjust the salt and pepper to taste and serve immediately.

Notes

This salad can be stored in the refrigerator for up to 2 days, but keep the avocado separate until ready to serve to prevent browning. Avoid freezing as the texture of the shrimp and avocado may not hold up well.
