Ingredients
  

Dressing
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • ½ clove garlic (minced)
  • ¼ teaspoon sea salt
Salad Ingredients
  • 5 cups cubed watermelon
  • 1 cup diced English cucumber Heaping
  • ¼ cup thinly sliced red onion
  • cup crumbled feta cheese
  • 1 whole avocado (cubed)
  • cup torn fresh mint or basil leaves
  • ½ whole jalapeño or serrano pepper (thinly sliced, optional)
  • to taste none sea salt

Method
 

Preparation
  1. In a small bowl, whisk together the olive oil, lime juice, garlic, and salt to make the dressing.
  2. On a large plate or platter, arrange the watermelon, cucumber, and red onions. Drizzle with half the dressing.
  3. Add the feta, avocado, mint, and the serrano pepper if using. Drizzle with the remaining dressing and season to taste.
Serving
  1. Enjoy the salad fresh for the best flavor, or serve it as a side dish with grilled chicken or fish.

Notes
