Salad Ingredients
  • 6 cups watermelon (seeded and cubed)
  • 1 whole English cucumber (chopped)
  • 6 oz feta cheese (cubed)
  • 1 handful fresh mint leaves (chopped)
  • 1 whole fresh lime (zest and juice)
  • to taste sea salt flakes
  • to taste fresh ground black pepper

Method
 

Preparation
  1. Add your cubed watermelon into a large serving bowl along with the rest of your ingredients.
  2. Very gently toss to combine, ensuring not to break up the feta cheese too much.
  3. Taste test your salad and adjust the seasoning if desired.
  4. Serve and enjoy!

Notes

Best enjoyed fresh. If stored, use an airtight container in the fridge for up to two days. This salad does not freeze well.
