  • 1 8-ounce wheel Brie cheese
  • 1/2 cup cranberry sauce Low-sugar option recommended
  • 1/4 cup chopped pistachios Optional
  • fresh sprigs rosemary Optional, for garnish
  • as needed pieces sliced apples or crackers For serving

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Using a sharp knife, carefully slice the Brie wheel in half horizontally to create two equal-sized rounds.
  3. Spread half of the cranberry sauce on one side of the Brie, then place the second round of Brie on top to create a 'sandwich.'
  4. Place the assembled Brie sandwich into a small cast iron skillet or baking dish. Top with the remaining cranberry sauce.
Baking
  1. Bake for 10-15 minutes or until the cheese begins to melt but is not completely melted.
  2. Remove from the oven and garnish with chopped pistachios and fresh rosemary sprigs, if desired.
Serving
  1. Serve immediately with sliced apples or crackers for dipping.

Notes

Store leftover baked Brie in the fridge for up to 3 days. Reheat gently in a low oven (300°F) for 8–10 minutes.
