Dough Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 1/4 cup butter, melted
Frying Ingredients
  • Oil for frying
  • Powdered sugar for dusting

Method
 

Preparation
  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, combine eggs, milk, vanilla extract, and melted butter. Mix well.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  4. On a floured surface, roll out the dough to about 1/2 inch thickness. Cut into squares.
Frying
  1. Heat oil in a deep fryer or large pot to 350°F (175°C).
  2. Fry the beignet squares in batches until golden brown, about 3-4 minutes per side.
  3. Remove from oil and drain on paper towels.
  4. Dust with powdered sugar and enjoy warm.

Notes

Serve these beignets warm, dusted with powdered sugar right before serving. Pair with hot coffee, tea, or warm milk. To refresh cooled beignets, warm in a 350°F (175°C) oven for 5–7 minutes.
