Method
Cooking the Pasta
- Start by boiling water in your large pot. Once boiling, add the rotini pasta and cook according to the box directions, about 8-10 minutes or until al dente.
Draining the Pasta
- Drain the pasta in a colander and allow it to cool slightly while preparing the rest of the salad ingredients.
Mixing Ingredients
- In your large mixing bowl, combine the cooked pasta with the diced roasted red peppers, diced yellow onion, sliced black olives, diced cucumber, chopped ham, chopped cheese sticks, and turkey sausage.
Dressing the Salad
- Pour 1/2 cup of Italian dressing over the pasta and vegetable mixture and gently toss to coat all ingredients thoroughly.
Serving
- Transfer the salad to your serving dish and top with grated Parmesan cheese. Serve inside a small pie pumpkin for an added festive touch.
Chilling
- Cover the salad with plastic wrap and place it in the refrigerator for at least one hour before serving to allow flavors to meld.
