- Peel the cucumbers to remove the skin for a smooth texture.
- Cut the cucumbers in half lengthwise and scoop out the seeds using a spoon to prevent a watery sauce.
- Grate the cucumbers using the large holes of a box grater.
- Squeeze the grated cucumber to remove excess liquid.
- Combine the drained grated cucumber with Greek yogurt, minced garlic, olive oil, chopped dill, lemon juice, salt, and pepper in a food processor.
- Blend all the ingredients until smooth and creamy, adjusting seasoning to taste.
- Cover the tzatziki and refrigerate for at least 1 hour before serving for the best flavor.
