  • 2 medium cucumbers Peeled and seeded
  • 16 ounce plain Greek yogurt For creaminess and protein
  • 3 cloves garlic, minced For flavor
  • 2 tablespoons olive oil Adds richness
  • 1 tablespoon chopped fresh dill For freshness
  • 1/2 medium lemon, juiced For brightness and acidity
  • to taste Salt and ground black pepper For seasoning

Method
 

Preparation
  1. Peel the cucumbers to remove the skin for a smooth texture.
  2. Cut the cucumbers in half lengthwise and scoop out the seeds using a spoon to prevent a watery sauce.
  3. Grate the cucumbers using the large holes of a box grater.
  4. Squeeze the grated cucumber to remove excess liquid.
  5. Combine the drained grated cucumber with Greek yogurt, minced garlic, olive oil, chopped dill, lemon juice, salt, and pepper in a food processor.
  6. Blend all the ingredients until smooth and creamy, adjusting seasoning to taste.
  7. Cover the tzatziki and refrigerate for at least 1 hour before serving for the best flavor.

Notes

Best consumed within 3 days. Do not freeze due to separation.
