Ingredients
  

Fruits
  • 1/2 cup diced pineapple bite-size pieces
  • 3-4 pieces strawberries cut in bite-size pieces
  • 1 piece kiwi skin removed and cut in bite-size pieces
  • 1 piece mango cut in bite-size pieces
Dairy
  • 10 oz Coconut Yogurt (1.25 cups, or any yogurt of your choice)
Granola & Toppings
  • 1/2 cup granola using the Coconut Cardamom Granola recommended
  • 2 tbsp sweetened shredded coconut for toasting
  • Honey or agave syrup or maple syrup to taste (optional)

Method
 

Preparation
  1. Mix all the diced fruits in a mixing bowl and set aside.
  2. Toast the sweetened shredded coconut in a microwave-safe bowl for three minutes, stirring at 1-minute intervals.
Assembly
  1. Take two clear serving glasses or bowls to showcase the layers.
  2. For the bottom layer, add 4 tablespoons of yogurt to both glasses.
  3. Add 2 tablespoons of granola and 2-3 tablespoons of mixed fruits.
  4. Repeat the layers: yogurt, granola, and fruits.
  5. Top off with 2 tablespoons of yogurt and granola, and sprinkle on the toasted shredded coconut.
  6. Drizzle with honey if desired before serving.

Notes

This parfait is best enjoyed fresh but can be refrigerated for up to two days. Store granola and toasted coconut separately to keep them crunchy. For a healthier version, use sugar-free yogurt and skip added sweeteners.
