Ingredients
  

Dry Ingredients
  • 2.5 cups all-purpose flour
  • 1 tsp baker’s ammonia or baking powder
  • 2 tsp ground cinnamon
  • 0.5 tsp ground cardamom
  • 0.25 tsp ground cloves
  • 1 pinch nutmeg
Wet Ingredients
  • 1 cup unsalted butter, cubed
  • 0.5 cup brown sugar
  • 0.25 cup vanilla sugar

Method
 

Preparation
  1. In a large mixing bowl, combine the flour, baking ammonia (or baking powder), cinnamon, cardamom, cloves, and nutmeg.
  2. In another bowl, cream the cubed unsalted butter with the brown sugar and vanilla sugar until light and fluffy.
  3. Gradually add the dry ingredients to the butter and sugar mixture. Mix well until a dough forms.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for at least two hours.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. On a floured surface, roll out the chilled dough to about ¼-inch thickness. Cut out shapes using cookie cutters or molds.
  3. Place the cookies on a parchment-lined baking sheet and bake for 10-12 minutes, until edges are light golden brown.
  4. Remove from oven and let the cookies cool on a wire rack before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them for up to three months.
