Preparation
- In a large mixing bowl, combine the flour, baking ammonia (or baking powder), cinnamon, cardamom, cloves, and nutmeg.
- In another bowl, cream the cubed unsalted butter with the brown sugar and vanilla sugar until light and fluffy.
- Gradually add the dry ingredients to the butter and sugar mixture. Mix well until a dough forms.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least two hours.
Baking
- Preheat your oven to 350°F (175°C).
- On a floured surface, roll out the chilled dough to about ¼-inch thickness. Cut out shapes using cookie cutters or molds.
- Place the cookies on a parchment-lined baking sheet and bake for 10-12 minutes, until edges are light golden brown.
- Remove from oven and let the cookies cool on a wire rack before serving.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them for up to three months.
