Preparation
- Heat your skillet over medium heat. Add oil and sauté the diced onion and minced garlic for 2-3 minutes until soft.
- Add diced tomatoes and jalapeño to the skillet and cook until the tomatoes soften, about 5 minutes.
- Stir in cumin, salt, and pepper and cook for another minute to meld the flavors.
Cooking
- Fry the eggs in a separate skillet to your desired doneness.
- While the eggs cook, warm the tortillas on low heat for 1 minute on each side.
Assembly
- Place a warm tortilla on a plate, spoon the tomato mixture onto it, add the fried eggs, and top with avocado slices if desired.
- Garnish with fresh cilantro and serve immediately.
Notes
You can meal prep the tomato mixture and refrigerate it. Leftovers can be stored in an airtight container for up to three days. Consider adding other veggies for added nutrients or black beans for extra fiber.
