Cooking Process
- Preheat your grill or skillet over medium heat.
- Season the boneless, skinless chicken breasts with salt and pepper.
- Place the seasoned chicken on the grill or skillet and grill for about 6-7 minutes on each side or until fully cooked through.
- In a separate pan, heat 2 tablespoons of olive oil over medium heat, then add the sliced onions and mushrooms. Sauté until softened and caramelized for about 5-7 minutes.
- Once the chicken is cooked, remove from the grill or skillet and place on a serving dish. Top with sautéed onions and mushrooms, then sprinkle with shredded cheese.
- Cover the chicken with a lid for about 2-3 minutes on low heat, allowing the cheese to melt.
- Serve hot, garnished with additional herbs if desired.
Notes
This dish is ideal for meal prep and can be stored in the fridge for up to 3 days. Leftovers can be reheated easily. Consider adding more veggies for extra fiber and using reduced-fat cheese for a lighter option.
