  • 1 cup Onions, Sliced Adds flavor and nutrition.
  • 1 cup Mushrooms, Sliced Adds savory flavor.
  • 1 cup Shredded Cheese Use a blend or cheddar for creaminess.
  • 2 tablespoons Olive Oil Heart-healthy fat.
  • to taste Salt and Pepper For seasoning.

Method
 

Cooking Process
  1. Preheat your grill or skillet over medium heat.
  2. Season the boneless, skinless chicken breasts with salt and pepper.
  3. Place the seasoned chicken on the grill or skillet and grill for about 6-7 minutes on each side or until fully cooked through.
  4. In a separate pan, heat 2 tablespoons of olive oil over medium heat, then add the sliced onions and mushrooms. Sauté until softened and caramelized for about 5-7 minutes.
  5. Once the chicken is cooked, remove from the grill or skillet and place on a serving dish. Top with sautéed onions and mushrooms, then sprinkle with shredded cheese.
  6. Cover the chicken with a lid for about 2-3 minutes on low heat, allowing the cheese to melt.
  7. Serve hot, garnished with additional herbs if desired.

Notes

This dish is ideal for meal prep and can be stored in the fridge for up to 3 days. Leftovers can be reheated easily. Consider adding more veggies for extra fiber and using reduced-fat cheese for a lighter option.
