  • 1 lb lean ground beef Use lean meat for a healthier option.
  • 2.5 tablespoons taco seasoning
  • 1/4 cup water
  • 1 pizza dough pizza dough Can substitute with whole wheat dough for more fiber.
  • 1 cup shredded Mexican cheese Use reduced-fat cheese for a lighter option.
For the Dipping Sauce
  • 1/2 cup plain Greek yogurt Adds protein and lowers fat content.
  • 1/2 cup ranch dressing Opt for a light version to lower calories.
  • 1 teaspoon lime juice Fresh lime juice for flavor.
  • 1 teaspoon chopped fresh cilantro Optional garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Stir in the taco seasoning and add the water. Cook for 2-3 minutes until well combined and heated through.
  4. Roll out the pizza dough on a lightly floured surface.
Assembly
  1. Spread the cooked ground beef evenly over the pizza dough.
  2. Sprinkle the shredded Mexican cheese over the beef.
  3. Roll the dough up jelly-roll style to create a log.
  4. Cut the rolled dough into 1/2-inch rounds.
  5. Arrange the pinwheels on a baking sheet lined with parchment paper.
Cooking
  1. Bake for 12-14 minutes or until golden and puffy.
Making the Dipping Sauce
  1. In a bowl, combine the Greek yogurt, ranch dressing, lime juice, and chopped cilantro. Stir to mix well.
Serving
  1. Serve the Cheesy Taco Pinwheels immediately with the dipping sauce, fresh salsa, and additional chopped cilantro on the side.

Notes

These pinwheels are easy to store and can be reheated. Pair with a salad for a balanced meal. You can freeze them for longer storage.
