Ingredients
  

For the meat mixture
  • 1 lb Ground Beef Star protein providing a hearty base.

For the lasagna layers

Method
 

Preparation
  1. In a skillet over medium heat, cook 1 pound of ground beef and 1 diced yellow onion for about 8-10 minutes until browned and onions are soft.
  2. Sprinkle taco seasoning over the beef, then add 1 cup of water. Stir and let it simmer on low for about 5 minutes.
  3. Make a spot in the center of the skillet, add oil, and toast 1 cup of uncooked long grain white rice for about 2-3 minutes.
  4. Mix in 1 can of enchilada sauce, 1 can of Rotel diced tomatoes and green chilies, and 2 cups of beef broth. Bring to a gentle boil, cover, and let it simmer for 12-15 minutes until rice is cooked.
Layering and Baking
  1. Preheat the oven to 400°F (200°C). Spread 8 corn tortillas in a baking dish.
  2. Layer with half of the refried beans, half of the meat mixture, and half of the cheese.
  3. Repeat with another 8 corn tortillas, remaining refried beans, remaining meat mixture, and rest of the cheese.
  4. Bake in the preheated oven for 10-15 minutes or until cheese is melted and bubbly.
  5. Let cool slightly before cutting into portions. Serve with your choice of toppings.

Notes

For a healthier option, use turkey or chicken instead of ground beef. Great for meal prep; can be stored for up to 3 days in the refrigerator or frozen for 2 months.
