  • 1 tablespoon cooking oil or butter Use a heart-healthy oil like olive oil.

Method
 

Preparation
  1. In a bowl, combine shredded chicken with taco seasoning and mix well.
  2. Heat a skillet over medium heat and add a little oil or butter.
  3. Place one tortilla in the skillet, sprinkle half of the cheese on one half of the tortilla.
  4. Add some of the seasoned chicken on top of the cheese, then add more cheese on top.
  5. Fold the tortilla over to close it, creating a half-moon shape.
  6. Cook for about 3-4 minutes until the bottom is golden brown and the cheese is melted.
  7. Flip the quesadilla and cook the other side for an additional 3-4 minutes.
  8. Remove from skillet and slice into wedges.
  9. Serve with salsa and sour cream on the side.

Notes

For a lower-carb option, use lettuce wraps. Prepare and freeze for easy meals. Air frying offers crispiness without extra oil. Try adding vegetables for extra flavor.
