Ingredients
  

Main Ingredients
  • 2 cans 10 ounce cans sweet white corn
  • 1 can 14.5 ounce can black beans
  • ½ whole red onion, chopped
  • 1 whole red pepper, chopped
  • ½ cup sugar Can be reduced or substituted with natural sweeteners.
  • ½ cup rice wine vinegar
  • 1 pinch salt To taste.

Method
 

Preparation
  1. In a large bowl, stir together the corn, black beans, red onion, and red pepper.
  2. Stir in the sugar and rice wine vinegar.
  3. Season with a pinch of salt to taste.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. Not recommended for freezing due to texture changes in vegetables.
