  • 8 oz Bow Tie Pasta Also known as farfalle.

Dressing
  • 1/2 cup Plain Greek Yogurt For a creamy texture.
  • 2 cloves Garlic, minced Infuses the dressing with flavor.
  • 2 tbsp Lime Juice, fresh Brightens the salad.
  • 1/2 tsp Salt Enhances flavors.
  • 1/4 tsp Cayenne Powder Adds heat.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and set aside to cool.
  2. Chop the fresh corn, tomatoes, red onion, cilantro, and avocado into bite-sized pieces.
Dressing
  1. In a separate bowl, combine Greek yogurt, chopped cilantro, minced garlic, lime juice, salt, and cayenne powder. Whisk together until smooth.
Assembly
  1. In a large mixing bowl, combine the cooled pasta with prepared vegetables. Pour the dressing over and gently toss to mix.
  2. If desired, sprinkle cotija cheese on top.
  3. Refrigerate for at least 30 minutes before serving for best flavor.

Notes

This salad can be made ahead and stored in the refrigerator for up to three days. Feel free to add grilled chicken or shrimp for more protein. Keep dressing separate until ready to serve to maintain freshness.
