Toppings

Method
 

Preparation
  1. Crack the egg into a mixing bowl. Add milk, melted butter, and vanilla extract. Whisk until well combined.
  2. In another bowl, mix flour, sugar, baking powder, and salt. Gradually add dry ingredients to the wet mixture, stirring gently.
Cooking
  1. Preheat your skillet or griddle over medium heat and lightly coat it with cooking oil.
  2. Pour about ¼ cup of batter for each pancake, cooking until bubbles form and edges appear set (about 2-3 minutes). Flip and cook until golden brown (1-2 minutes).
Whipping Cream
  1. In a mixing bowl, whip the heavy cream, adding sugar if desired, until soft peaks form.
Assembly
  1. In a small bowl, mix quartered strawberries with jam and lemon juice. To assemble, take a pancake, add the strawberry mixture, and top with whipped cream. Fold and serve immediately.

Notes

For meal prep, you can make the batter the night before. Store leftovers in an airtight container. To make gluten-free, use a gluten-free flour blend.
