Strawberry Mousse Ladyfingers

Ingredients
  

For the Strawberry Mousse
  • 2 packages 8-ounce packages cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups fresh strawberries, pureed
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
For Assembly
  • 3 packages 3-ounce packages soft split ladyfingers

Method
 

Preparation
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar and mix until combined.
  3. Stir in the pureed strawberries and vanilla extract until well blended.
  4. In another bowl, whip the heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the strawberry mixture.
Assembly
  1. Quickly dip each ladyfinger into water or juice to soften them, then layer them in the bottom of a serving dish.
  2. Spread half of the strawberry mousse over the ladyfingers.
  3. Repeat with another layer of dipped ladyfingers and the remaining mousse.
  4. Chill in the refrigerator for at least 2 hours before serving.

Notes

For a healthier version, use low-fat cream cheese and a natural sweetener. Can also be frozen without ladyfingers.
