Preparation
- In a large bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar and mix until combined.
- Stir in the pureed strawberries and vanilla extract until well blended.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the strawberry mixture.
Assembly
- Quickly dip each ladyfinger into water or juice to soften them, then layer them in the bottom of a serving dish.
- Spread half of the strawberry mousse over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and the remaining mousse.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
For a healthier version, use low-fat cream cheese and a natural sweetener. Can also be frozen without ladyfingers.
