Ingredients
  

For the Filling
  • 8 oz Cream Cheese (softened to room temp) Use low-fat cream cheese for a lighter option.
  • 1 pint Heavy Whipping Cream Can be substituted with Greek yogurt for a healthier version.
  • 1/4 cup Powdered Sugar Adjust to taste; can use sugar substitutes.
  • 1/4 tsp Vanilla
  • 1 tbsp Lemon Zest
For the Sandwiches
  • 12 pieces Strawberries Fresh and hulled.
  • 8-10 slices White Bread Whole grain or high-protein bread for a healthier option.

Method
 

Preparation
  1. Wash, hull, and thoroughly dry the strawberries.
  2. Whip the cream cheese on high until light and fluffy (2-3 minutes).
  3. Add the heavy cream, vanilla, and sugar and continue whipping on high until the whipped cream is set stiff, scraping down the sides as needed.
  4. Add lemon zest and stir to combine.
Assembly
  1. Spread a layer of cream mixture on each piece of bread.
  2. Arrange the strawberries on half of the bread slices, aligning the center berries for a visually appealing cut.
  3. Add more cream mixture on top of the strawberries.
  4. Add a slice of bread on top and gently press it together.
  5. Score a line in the diagonal direction where you arranged the strawberries with your knife.
Setting
  1. Wrap each sandwich tightly in plastic wrap and place them on a tray, adding a slightly heavy item on top to compress.
  2. Refrigerate for 2 hours to set.
  3. Once chilled, remove the plastic wrap.
  4. Cut off the edges with a sharp serrated knife, cleaning between cuts.
  5. Finally, make your diagonal cut along your scored line.

Notes

Serve chilled for the best texture. For a healthier option, pair with plain Greek yogurt and additional berries. Can be made diabetic-friendly by using sugar substitutes and whole grain bread.
