Preparation
- Wash, hull, and thoroughly dry the strawberries.
- Whip the cream cheese on high until light and fluffy (2-3 minutes).
- Add the heavy cream, vanilla, and sugar and continue whipping on high until the whipped cream is set stiff, scraping down the sides as needed.
- Add lemon zest and stir to combine.
Assembly
- Spread a layer of cream mixture on each piece of bread.
- Arrange the strawberries on half of the bread slices, aligning the center berries for a visually appealing cut.
- Add more cream mixture on top of the strawberries.
- Add a slice of bread on top and gently press it together.
- Score a line in the diagonal direction where you arranged the strawberries with your knife.
Setting
- Wrap each sandwich tightly in plastic wrap and place them on a tray, adding a slightly heavy item on top to compress.
- Refrigerate for 2 hours to set.
- Once chilled, remove the plastic wrap.
- Cut off the edges with a sharp serrated knife, cleaning between cuts.
- Finally, make your diagonal cut along your scored line.
Notes
Serve chilled for the best texture. For a healthier option, pair with plain Greek yogurt and additional berries. Can be made diabetic-friendly by using sugar substitutes and whole grain bread.
