Baking
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the strawberry cake mix, vegetable oil, and eggs until well combined.
- Stir in the mini chocolate chips and vanilla extract.
- Drop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes or until the edges are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for 3-5 days. For longer storage, freeze in a single layer. Cookies can be enjoyed warm or at room temperature, and can be served with ice cream or drizzled with chocolate.
