Preparation
- In a mixing bowl, combine the BBQ sauce, honey, olive oil, garlic powder, smoked paprika, salt, and pepper. Mix well to ensure flavors blend.
- Coat the chicken drumsticks thoroughly with the mixture, ensuring they are evenly covered.
- Preheat your oven to 400°F (200°C).
- Wash and cut the potatoes into thick fries.
- In another bowl, toss the potatoes with olive oil, paprika, garlic powder, and salt and pepper.
Cooking
- Place the coated chicken on a lined baking sheet, spaced out for even cooking, and bake for 35-40 minutes, turning halfway through.
- After the chicken has baked for about 15 minutes, spread the seasoned fries on another baking sheet and increase the oven temperature to 425°F (220°C). Roast fries for 30-35 minutes, flipping halfway through.
Making the Slaw
- In a mixing bowl, combine shredded cabbage and carrots.
- In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, and a pinch of salt and pepper. Pour over cabbage and carrots, and toss until coated.
Serving
- Once chicken and fries are cooked, arrange on a plate with the slaw. Drizzle additional BBQ sauce over the chicken if desired.
Notes
For a healthier option, substitute regular barbecue sauce with a sugar-free version. Store leftovers in an airtight container in the refrigerator for 3-4 days.
