  • 1.5 cups chopped baby spinach
  • 1 cup grated zucchini Excess moisture squeezed out
  • 1 large egg Lightly beaten
  • 4 tablespoons olive oil
  • 0.25 cup Greek yogurt
  • 1 tablespoon chopped scallions
  • 1 tablespoon chopped fresh dill
  • 0.5 cup crumbled feta cheese
  • 0.5 cup shredded cheddar cheese
  • Salt and black pepper To taste
  • 1 cup self-rising flour Sifted

Method
 

Preparation
  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the egg, olive oil, and Greek yogurt until smooth.
  3. Add the spinach, zucchini, scallions, dill, feta, cheddar, salt, and pepper. Stir until everything is evenly combined.
  4. Sprinkle in the self-rising flour and gently fold it into the mixture. Keep working it until it forms a cohesive dough.
  5. Scoop out portions of about 2 tablespoons and shape them into small balls. Place on the baking sheet and gently flatten.
  6. Bake for 17–20 minutes, or until the edges turn golden brown.
  7. Allow them to cool slightly before serving warm.

Notes

Serve warm or at room temperature with a dip like Greek yogurt mixed with lemon and dill, or low-sugar marinara. Store in an airtight container for up to 4 days.
