- Heat olive oil in a skillet over medium heat.
- Add chopped spinach and sauté until wilted.
- Remove the spinach from the skillet and mix it with crumbled feta cheese.
- Place one tortilla in the skillet, add a portion of the spinach and feta mixture, and top with another tortilla.
- Cook for 2-3 minutes on each side or until golden brown and crispy.
- Repeat with remaining tortillas.
- Cut into wedges and serve warm.
Notes
Can be served with salsa, avocado slices, or Greek yogurt. They can be stored in the fridge for up to three days or frozen for a month.
