Ingredients
  

For the Sandwich
  • 2 tablespoons butter or margarine for spreading on the bread
  • 4 slices white bread can substitute with whole grain or gluten-free for healthier options
  • 2 slices American cheese
  • 1 roma (plum) tomato, thinly sliced
  • 1/4 small onion, chopped
  • 1 jalapeno pepper, chopped

Method
 

Preparation
  1. Heat a large skillet over low heat.
  2. Spread butter or margarine onto one side of two slices of bread.
  3. Place both pieces buttered side down in the skillet.
  4. Lay a slice of cheese on each one.
  5. Top with slices of tomato, onion, and jalapeno.
  6. Butter one side of the remaining slices of bread.
  7. Place the buttered side up on top of the sandwich.
Cooking
  1. When the bottom of the sandwiches are toasted, flip them over and fry until brown on the other side.

Notes

To store, allow to cool before refrigerating in an airtight container for up to three days. To freeze, wrap tightly in plastic wrap and store in a freezer-safe bag.
