Preparation
- Dice the potatoes into small, bite-sized pieces.
- Crack the eggs into a bowl and whisk until well blended.
- Chop fresh herbs such as cilantro or green onions.
Cooking
- Heat a frying pan over medium-high heat and add a drizzle of oil. Add the diced potatoes and cook until golden brown and crispy, about 10 to 15 minutes. Season with salt and pepper.
- In a separate pan, heat a little oil over medium heat and pour in the whisked eggs. Scramble the eggs until fluffy, about 5 minutes. Remove from heat.
- In the same pan used for the eggs, add the chorizo sausage. Cook over medium heat, breaking it up with a spatula until browned and fully cooked, about 5 to 7 minutes. Drain excess grease.
Assembly
- Lay a soft flour tortilla flat on a clean surface. Layer the crispy potatoes, scrambled eggs, and browned chorizo down the center. Sprinkle melted Mexican cheese on top and add fresh herbs.
- Roll the tortilla tightly from the bottom up, tucking in the sides as you go. Serve warm.
Notes
For a healthier version, swap traditional potatoes for sweet potatoes or reduce oil usage. These burritos can also be made in bulk and stored in the fridge for up to 3 days. To reheat, use an air fryer for crispiness. You can make low-carb by using low-carb tortillas or lettuce wraps, and gluten-free by using gluten-free tortillas.
