Ingredients
  

For the Burrito
  • 4 large Soft Flour Tortillas Look for small or medium-sized ones for easy handling.
  • 1 cup Bite-sized Crispy Potatoes Diced into small pieces.
  • 4 large Fluffy Eggs Cracked and whisked before cooking.
  • 1 cup Mexican Cheese Adds rich flavor and melts beautifully.
  • 8 oz Spicy Chorizo Sausage Cooked until browned.
  • 1/4 cup Fresh Herbs Chopped, such as cilantro or green onions.

Method
 

Preparation
  1. Dice the potatoes into small, bite-sized pieces.
  2. Crack the eggs into a bowl and whisk until well blended.
  3. Chop fresh herbs such as cilantro or green onions.
Cooking
  1. Heat a frying pan over medium-high heat and add a drizzle of oil. Add the diced potatoes and cook until golden brown and crispy, about 10 to 15 minutes. Season with salt and pepper.
  2. In a separate pan, heat a little oil over medium heat and pour in the whisked eggs. Scramble the eggs until fluffy, about 5 minutes. Remove from heat.
  3. In the same pan used for the eggs, add the chorizo sausage. Cook over medium heat, breaking it up with a spatula until browned and fully cooked, about 5 to 7 minutes. Drain excess grease.
Assembly
  1. Lay a soft flour tortilla flat on a clean surface. Layer the crispy potatoes, scrambled eggs, and browned chorizo down the center. Sprinkle melted Mexican cheese on top and add fresh herbs.
  2. Roll the tortilla tightly from the bottom up, tucking in the sides as you go. Serve warm.

Notes

For a healthier version, swap traditional potatoes for sweet potatoes or reduce oil usage. These burritos can also be made in bulk and stored in the fridge for up to 3 days. To reheat, use an air fryer for crispiness. You can make low-carb by using low-carb tortillas or lettuce wraps, and gluten-free by using gluten-free tortillas.
