Method
 

Preparation
  1. Wash the fresh peaches thoroughly. Peel the skin if preferred, then slice into thin wedges.
  2. Preheat the oven to 350°F (175°C).
  3. In a mixing bowl, combine the sliced peaches with a tablespoon of honey or maple syrup and a dash of cinnamon. Toss gently and pour into a baking dish.
Making the Topping
  1. In another bowl, whisk together the whole wheat flour, oats, baking powder, salt, and cinnamon.
  2. Add unsweetened almond milk and remaining honey or maple syrup, stirring until a thick batter forms.
Assembly and Baking
  1. Pour the topping over the peaches in the baking dish, spreading it evenly.
  2. Bake for 30-35 minutes until the topping is golden brown and the peach filling is bubbly.
  3. Allow to cool for 10 minutes before serving.

Notes

For a healthier version, consider using low-calorie sweeteners instead of honey or maple syrup. Also, you can make a mixed fruit cobbler by substituting half of the peaches with berries.
