Method

Preparation of Dough
  1. In a large mixing bowl, combine active sourdough starter and warm water. Mix well to dissolve the starter.
  2. Gradually add freshly milled hard white wheat flour and salt. Stir until a shaggy dough forms.
  3. Let the dough rest for about 15 minutes.
Kneading the Dough
  1. Knead the dough on a lightly floured surface for about 10 minutes until it becomes silky and elastic.
  2. Alternatively, use a stand mixer with a dough hook.
First Rise
  1. Place the kneaded dough in a greased bowl and cover it with a damp cloth.
  2. Let it rise in a warm place for 4-6 hours or until doubled in size.
Making the Sauce
  1. In a saucepan, heat 2 tablespoons of olive oil over medium heat. Sauté minced garlic until fragrant.
  2. Stir in tomato paste, crushed tomatoes, red pepper flakes, oregano, sugar, salt, black pepper, chili powder, paprika, and cayenne pepper.
  3. Allow simmering for about 15 minutes to meld flavors.
Preparing Pizza
  1. Punch down the risen dough and transfer it to a greased baking sheet.
  2. Gently stretch the dough to fit the pan, creating dimples with your fingers.
  3. Spread the prepared sauce evenly over the dough, then layer mozzarella cheese and add pepperoni slices on top.
Final Rise and Baking
  1. Cover the topped dough with a cloth and let it rise for another hour.
  2. Preheat oven to 475°F (245°C). Bake for 20-25 minutes until golden brown and bubbly.
Cool and Serve
  1. Remove from oven and let cool for a few minutes. Slice and serve warm.

Notes

Add extra vegetables as toppings for more nutrients. Store in the refrigerator for 3-5 days and reheat slices for crispness. Can swap out pepperoni for chicken or feta for variety.
