Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter and sugar until light and fluffy.
- Add peach preserves, egg, and vanilla extract to the butter mixture and beat until well combined.
- Gradually mix dry ingredients into the wet mixture, stirring gently until just combined.
- Fold in the diced peaches gently.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
- In a small bowl, mix cinnamon and sugar, and sprinkle over the cookie dough.
- Bake for 12-15 minutes or until edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a cooling rack.
Notes
These cookies can be stored in an airtight container for up to a week. Freeze for longer storage. Feel free to mix in other fruits or nuts for added texture.
