Method
 

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit. Grease and flour two loaf pans.
  2. In a large bowl, beat together the vegetable oil, eggs, sugar, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, cinnamon, allspice, baking soda, baking powder, and salt.
  4. Pour the dry ingredient mixture into the wet mixture and mix until combined. Stir in the grated zucchini.
  5. In a small bowl, combine the topping ingredients: remaining granulated sugar and cinnamon.
Baking
  1. Pour half of the batter into the prepared loaf pans. Sprinkle half of the cinnamon-sugar mixture over the batter. Layer the remaining batter on top and sprinkle the rest of the topping.
  2. Bake for 45-50 minutes or until a knife inserted in the center comes out clean.
  3. Let the bread cool in the pans for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

For healthier options, consider whole wheat flour or almond flour. This bread is great for meal prep and freezes well.
