Method
 

Preparation
  1. Start by heating the olive oil in a large skillet over medium-high heat. Season the beef cubes with salt and pepper. In batches, sear the beef for about 2-3 minutes on each side until it’s nicely browned. Once browned, transfer the beef to your slow cooker.
  2. In the same skillet, melt 2 tablespoons of unsalted butter. Add in the minced garlic and sauté for about 1 minute until it becomes fragrant.
  3. Pour in the beef broth and Worcestershire sauce, scraping up any flavorful browned bits stuck to the bottom of the skillet. Stir in the dried thyme and rosemary.
  4. Pour this garlicky mixture over the beef in your slow cooker.
  5. Add the halved baby potatoes to the slow cooker, tossing everything together to ensure the potatoes mix well with the beef and sauce.
  6. Place the remaining 2 tablespoons of butter on top of the beef and potatoes.
Cooking
  1. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.
  2. Before serving, taste the dish and adjust the seasoning with extra salt and pepper if needed.
Serving
  1. Garnish your hearty meal with freshly chopped parsley and serve warm.
