Preparation
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat two tablespoons of olive oil over medium-high heat.
Cooking
- Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and minced garlic. Sauté for about 3-4 minutes, until mushrooms are tender.
- Pour in the chicken broth and white wine, using a wooden spoon to scrape up any brown bits from the bottom.
- Add fresh thyme to the sauce and bring to a simmer. Cook for about 5 minutes to reduce slightly.
- Stir in the butter to create a rich texture.
- Return the chicken to the skillet, spooning sauce over top. Cook for an additional 2-3 minutes.
- Serve garnished with chopped parsley.
Notes
