Ingredients
  

Main Ingredients
  • 1 lb chicken breast, diced Can substitute with chicken thighs for more flavor.
  • 2 medium zucchinis, sliced Fresh zucchini is best for texture.
  • 2 tablespoons soy sauce Use low-sodium soy sauce if needed.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • optional red pepper flakes for heat Add for spiciness.

Method
 

Cooking Instructions
  1. In a large pan, heat olive oil over medium heat.
  2. Add garlic and sauté for about 1 minute until fragrant.
  3. Add diced chicken to the pan, cooking until it's browned and cooked through.
  4. Add sliced zucchini and soy sauce, cooking for about 5 minutes until zucchini is tender but still crisp.
  5. Season with salt, pepper, and red pepper flakes if desired.
  6. Serve hot.

Notes

For storage, keep leftovers in an airtight container for 3 to 4 days. This stir fry can be frozen but zucchini may lose its texture. Thaw in the fridge and reheat on the stove.
