  • 4 large Flour Tortillas These serve as the base.
  • 2 cups Shredded Cheese (cheddar or Monterey Jack) Provides cheesy flavor and calcium.
  • 1 cup Cooked Chicken (shredded) Use leftover or rotisserie chicken.
Vegetable Additions
  • 1 Diced Bell Pepper Adds color and crunch.
  • 1 Diced Onion Enhances flavor depth.
  • 1 can Black Beans (drained and rinsed) Provides fiber and protein.
Seasoning
  • 1 teaspoon Taco Seasoning Ties flavors together.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, place two tortillas side by side.
  3. Layer half of the cheese on one tortilla, followed by the shredded chicken, diced bell pepper, diced onion, black beans, and taco seasoning. Top with the remaining cheese.
  4. Place the other two tortillas on top of the layered fillings.
Cooking
  1. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the tortillas are golden brown.
  2. Once done, slice the quesadillas into wedges and serve immediately with sour cream and salsa.

Notes

For a healthier option, use whole grain or gluten-free tortillas. You can also add other vegetables like spinach or zucchini. Store leftovers in an airtight container in the refrigerator for up to 3 days.
