  • 2 pounds potatoes, thinly sliced
  • 6 slices bacon, chopped Crisp for best flavor
  • 1 cup shredded cheddar cheese Reserve some for topping
  • 1 onion thinly sliced To be caramelized
  • 2 cups heavy cream Can substitute with lighter options
  • 1 teaspoon garlic powder
Seasoning
  • Salt and pepper to taste
Garnish
  • 2 tablespoons fresh parsley, chopped For garnish before serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and drain on paper towels.
  3. In the same skillet, add the sliced onions and cook until caramelized, about 10-15 minutes.
  4. In a mixing bowl, combine the heavy cream, garlic powder, salt, and pepper.
Layering
  1. In a greased baking dish, layer half of the sliced potatoes, then half of the caramelized onions and bacon, and a sprinkle of cheese. Repeat layers with the remaining ingredients.
  2. Pour the cream mixture over the layered potatoes.
Baking
  1. Cover with foil and bake for 45 minutes.
  2. Remove the foil, sprinkle with remaining cheese, and bake for an additional 15-20 minutes, until golden and bubbly.
  3. Let cool slightly, garnish with parsley, and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days. For longer storage, freeze for up to three months. Consider pairing with a light salad for a balanced meal.
