Ingredients

Dough Ingredients
  • 500 g All-Purpose Flour Forms the base of our focaccia, providing the necessary structure.
  • 350 ml Water Vital for hydrating the dough and activating the sourdough starter.
  • 100 g Sourdough Starter Adds unique flavors and natural leavening.
  • 10 g Salt Enhances flavor and strengthens gluten.
  • 2 Tablespoons Olive Oil Contributes to softness and can be used for greasing.
  • Fresh Rosemary Adds flavor that complements the sourdough.
  • Sea Salt Sprinkled on top before baking for added flavor.

Method

Preparation
  1. In a large bowl, combine the all-purpose flour and salt.
  2. In another bowl, mix the water and sourdough starter, then add this mixture to your flour and salt mixture, stirring until a sticky dough forms.
  3. Add the olive oil to the dough, kneading it for a few minutes until it is well incorporated and slightly elastic.
  4. Cover the dough and let it rise for 30 minutes in a warm spot.
  5. While the dough is rising, preheat your oven to 220°C (425°F).
  6. Grease your baking sheet generously with olive oil.
  7. Transfer the risen dough to the baking sheet, stretching it gently to fit the pan; create dimples with your fingers.
  8. Top the dough with fresh rosemary and a sprinkle of sea salt.
Baking
  1. Bake in your preheated oven for 20-25 minutes, or until the focaccia is golden brown.
  2. Allow your focaccia to cool slightly before slicing and serving.

Notes

To enhance the focaccia's protein content, consider adding grilled chicken or chickpeas. Store covered at room temperature for a couple of days or freeze for longer storage. Experiment with toppings like sun-dried tomatoes or olives.
