Preparation
- Preheat the oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, and pepper, then spread it on a baking sheet.
Roasting
- Roast for 25-30 minutes until the squash is tender and golden brown.
Cooking
- In a large pot, heat some olive oil over medium heat and sauté the onion until translucent (about 5-7 minutes).
- Add the minced garlic and ground cumin, cooking for another minute.
- Add the roasted squash and vegetable broth to the pot, bring to a boil, then reduce to a simmer. Allow the soup to simmer for about 10 minutes to blend flavors.
- Use an immersion blender to puree the soup until smooth. If desired, stir in coconut milk and adjust seasoning.
- Serve hot garnished with fresh herbs.
Notes
Great for meal prep; store in the refrigerator for up to 4 days or freeze for up to 3 months. For a spicier kick, consider adding cayenne pepper or smoked paprika.
