Preparation
  1. Heat a skillet over medium heat and toast the tortillas lightly until warm and slightly crispy.
  2. In the same skillet, crack the eggs and cook them sunny-side up or to your preference.
  3. In a small saucepan, heat the rinsed black beans over low-medium heat, seasoning with salt and pepper.
Assembly and Serving
