Ingredients
  

For the chicken
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
For the vegetables
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced

Method
 

Cooking
  1. Heat the olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, oregano, and thyme.
  3. Add the chicken to the skillet and cook for about 5-7 minutes on each side, until golden brown and cooked through.
  4. Remove the chicken from the skillet and let it rest.
  5. In the same skillet, add the garlic and vegetables. Cook for about 5-7 minutes until they are tender.
  6. Slice the chicken and serve it on top of the sautéed vegetables.

Notes

For added brightness, you can serve with a squeeze of lemon juice or drizzle of extra virgin olive oil. Pair with brown rice or quinoa for a more filling meal.
