Preparation
- Toast the pistachios in a dry skillet over medium heat until fragrant, about 5 minutes. Let them cool.
- In a food processor, blend the cooled pistachios until finely ground.
- In a large bowl, mix together the Greek yogurt, honey (or maple syrup), vanilla extract, and salt.
- Stir in the ground pistachios until well combined.
- Spoon the mixture into cup molds or small cups.
- Freeze for at least 4 hours or until solid.
- Serve as is or top with chocolate chips or additional chopped nuts.
Notes
Store in an airtight container in the freezer for up to a month. Let sit at room temperature for a few minutes before serving to soften slightly.
