Ingredients
  

Main Ingredients
  • 1 cup unsalted pistachios Toast in a dry skillet for best flavor.
  • 2 cups plain Greek yogurt High in protein.
  • 1/2 cup honey or maple syrup Can use agave syrup for a lower glycemic index.
  • 1 teaspoon vanilla extract
  • 1 pinch salt Enhances flavor.
  • 1 cup optional: chocolate chips or chopped nuts for topping Add as desired.

Method
 

Preparation
  1. Toast the pistachios in a dry skillet over medium heat until fragrant, about 5 minutes. Let them cool.
  2. In a food processor, blend the cooled pistachios until finely ground.
  3. In a large bowl, mix together the Greek yogurt, honey (or maple syrup), vanilla extract, and salt.
  4. Stir in the ground pistachios until well combined.
  5. Spoon the mixture into cup molds or small cups.
  6. Freeze for at least 4 hours or until solid.
  7. Serve as is or top with chocolate chips or additional chopped nuts.

Notes

Store in an airtight container in the freezer for up to a month. Let sit at room temperature for a few minutes before serving to soften slightly.
