Preparation
  1. Start by gathering all your ingredients. Wash the spinach thoroughly and chop it finely.
  2. Crumble the feta cheese and set it aside.
Cooking
  1. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil. Allow it to warm up until it shimmers.
  2. Add the chopped spinach to the skillet. Sauté for about 2-3 minutes until the spinach is wilted but still bright green.
  3. In a mixing bowl, crack the eggs, and whisk them thoroughly. You can add salt, pepper, and any other spices you prefer at this stage.
  4. Pour the beaten eggs over the sautéed spinach in the skillet. Cook for about 2-3 minutes, stirring occasionally, until the eggs are slightly set.
  5. Sprinkle the crumbled feta cheese over the top of the eggs. Continue to cook for another 2 minutes until the eggs are fully cooked, and the cheese is slightly melted.
Serving
  1. Once everything is cooked to perfection, slide your breakfast onto a plate and enjoy warm.

Notes

For added flavor, consider adding diced tomatoes or bell peppers to your sauté. This dish works well for meal prep and can be stored in an airtight container in the refrigerator for up to three days.
