Cooking
  1. Heat a skillet over medium heat and add olive oil or butter.
  2. Place one tortilla in the skillet flat against the surface.
  3. Layer steak, sautéed onions, peppers, and cheese on one half of the tortilla.
  4. Fold the tortilla over to cover the filling and press down gently.
  5. Cook until golden brown on one side, then flip and cook until the other side is golden and cheese is melted.
  6. Remove from skillet, slice into wedges, and serve warm.

Notes

For a diabetic-friendly option, use whole wheat tortillas. These quesadillas are great for meal prep and can be frozen after cooking.
