Preparation
- Spread pesto on one side of each slice of bread.
- Place a slice of cheese on the unpestoed side of one bread slice.
- Top with the other slice of bread, pesto side down.
Cooking
- Heat a skillet over medium heat and add butter.
- Once melted, place the sandwich in the skillet.
- Grill until golden brown on one side, about 3-4 minutes.
- Flip and grill the other side until the cheese is melted and both sides are golden brown.
- Remove from skillet, cut in half, and enjoy!
Notes
For healthier options, use whole grain bread and lower-fat cheese. Pair with a salad or vegetable soup for a balanced meal. Store leftovers in the fridge for up to 2 days.
