Preparation
- In a bowl, combine olive oil, minced garlic, lemon juice, herbs, salt, and pepper. Mix well until all ingredients are thoroughly combined.
- Add cubed chicken or beef to the marinade. Ensure all pieces are well coated. Cover with plastic wrap and let it sit for at least 30 minutes.
Cooking
- Preheat your grill to medium-high heat or your air fryer to around 375°F (190°C).
- Thread the marinated meat and vegetables onto the skewers, alternating between them.
- Place the skewers on the heated grill. Cook for about 10-15 minutes, turning occasionally, until the meat is cooked through and the vegetables are tender.
- Remove the kabobs from the grill and serve warm.
Notes
Marinate a day ahead for easier meal prep. Leftover kabobs can be stored in an airtight container in the fridge for up to 3 days. Try different vegetables like mushrooms or asparagus for variety.
