  • 1 lb Boneless chicken breast or lean beef, cubed Choose a lean protein for the kabobs.
  • 2 cups Bell peppers, cut into chunks Any color bell peppers can be used.
  • 1 cup Onions, cut into chunks Can substitute with red or yellow onions.
  • 1 cup Cherry tomatoes Add a burst of juiciness.
  • 1 medium Zucchini, sliced Add more fiber and nutrients.
Marinade
  • 1/4 cup Olive oil Healthy fat that enhances flavor.
  • 2 cloves Minced garlic Adds flavor and health benefits.
  • 2 tbsp Lemon juice Helps tenderize the meat.
  • 1 tbsp Dried herbs (e.g., oregano or thyme) Add seasoning to taste.
  • 1 tsp Salt Adjust to preference.
  • 1 tsp Pepper For seasoning.

Method
 

Preparation
  1. In a bowl, combine olive oil, minced garlic, lemon juice, herbs, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  2. Add cubed chicken or beef to the marinade. Ensure all pieces are well coated. Cover with plastic wrap and let it sit for at least 30 minutes.
Cooking
  1. Preheat your grill to medium-high heat or your air fryer to around 375°F (190°C).
  2. Thread the marinated meat and vegetables onto the skewers, alternating between them.
  3. Place the skewers on the heated grill. Cook for about 10-15 minutes, turning occasionally, until the meat is cooked through and the vegetables are tender.
  4. Remove the kabobs from the grill and serve warm.

Notes

Marinate a day ahead for easier meal prep. Leftover kabobs can be stored in an airtight container in the fridge for up to 3 days. Try different vegetables like mushrooms or asparagus for variety.
