Ingredients
  

For the Mocktail
  • 2 teabags 2 Peppermint teabags Use good quality peppermint tea bags.
  • 1 cup 1 Cup boiling water Boil water prior to brewing tea.
  • 2 teaspoons 2 teaspoon lemon zest Zest a fresh lemon.
  • 2 tablespoons 2 tablespoon lemon juice Freshly squeezed is best.
  • 2 teaspoons 2 teaspoon honey (optional) Omit for a diabetic-friendly version.
  • to taste Soda water Top the drink with soda to your preference.
For Garnishing
  • Lemon slices Additional for garnish.
  • Fresh mint sprigs Optional for garnish.

Method
 

Preparation
  1. Place the teabags, boiling water, and honey (if using) in a jug and brew according to packet instructions.
  2. Remove the teabags and chill the tea in the fridge.
  3. Zest and juice the lemon.
  4. Combine the chilled tea, lemon zest, and lemon juice in the jug. Stir well.
  5. Divide the mixture between 2 ice-filled glasses and top with soda water.
  6. Garnish with extra lemon slices and serve immediately.

Notes

Store leftover brewed tea in a sealed jug for up to 3 days. Avoid adding soda water until ready to serve to maintain fizz.
