Vinaigrette Ingredients

Preparation
  1. Wash the kale thoroughly under cold water. Remove tough stems and chop the leaves into bite-sized pieces. Place in a large bowl.
  2. Slice the fresh peaches and add them to the bowl along with the blueberries.
  3. In a small bowl, whisk together honey, lemon juice, olive oil, salt, and pepper to prepare the vinaigrette.
  4. Pour the vinaigrette over the salad mixture in the large bowl and toss gently to coat.
  5. Sprinkle toasted pepitas on top just before serving.

Notes

For best results, mix the kale and fruits with the dressing just before serving to keep the kale fresh. Store leftovers in an airtight container for up to two days, adding pepitas just before serving to prevent sogginess. Customize by adding other fruits or proteins such as grilled chicken or chickpeas for a heartier meal.
