Preparation
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots. Cut them into even-sized pieces, around 2 to 3 inches long.
- In a mixing bowl, combine the olive oil, minced garlic, salt, and pepper. Add in the carrot pieces and toss until they are all evenly coated.
- Sprinkle the grated Parmesan cheese over the carrots and toss again to ensure they are thoroughly covered.
Cooking
- Spread the coated carrots in a single layer on a baking sheet.
- Place the baking sheet in the oven and roast for about 25-30 minutes. Stir the carrots halfway through the cooking time.
- After 25 minutes, check the carrots. They should be golden brown, tender, and slightly caramelized.
- Once roasted, take them out of the oven and let them cool slightly. Garnish with fresh parsley before serving.
Notes
These roasted carrots can be served alongside grilled chicken, baked fish, or plant-based dishes. Leftover carrots can be stored in an airtight container for up to 4 days or frozen for about 3 months.
