  • 14 oz turkey breast sliced into thin strips
  • 7 oz spinach trimmed
  • 1/2 cup almonds unblanched
  • 2 pieces oranges zested and juiced
  • 1 tablespoon flour optional for thickening
  • 2 tablespoons extra virgin olive oil
  • Salt to taste

Method
 

Preparation
  1. Slice the turkey breast into thin strips. Trim the spinach and zest one orange while reserving the juice.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Add the sliced turkey breast and season with salt. Sauté for about 5-7 minutes until the turkey is cooked through and golden.
  2. Squeeze the juice of both oranges into the skillet, adding the zest as well. Stir to coat the turkey with the citrus flavor.
  3. Add the spinach to the skillet and cook for another 2-3 minutes until wilted.
  4. Stir in the unblanched almonds. For a thicker sauce, sprinkle flour over the turkey and stir until well combined.
Serving
  1. Remove from heat and serve the Orange Turkey with Spinach and Almonds over quinoa or brown rice, estimating about one cup per serving.

Notes

For meal prep, store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. To reheat, thaw and warm in a skillet over low heat. Consider serving with a mixed green salad or whole grain pita.
