Method
 

Cooking
  1. In a large pot, cook the sliced sausage over medium heat until browned.
  2. Add the diced onion, bell pepper, celery, and garlic; sauté until softened.
  3. Stir in the diced tomatoes, chicken broth, and Cajun seasoning.
  4. Once boiling, add the rinsed rice to the pot. Stir well, then bring it back to a boil.
  5. After boiling, reduce heat to low, cover, and simmer for about 20 minutes.
  6. Add the shrimp and cook until pink and opaque, about 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with green onions.

Notes

For added spice, consider adding diced jalapeños or a splash of hot sauce. This meal can be stored in the fridge for up to four days and reheated. To make it healthier, serve over leafy greens or add extra vegetables like zucchini.
